SPOILERS!
The Thrawn Trilogy: "Heir to the Empire", "Dark Force Rising" and "The Last Command" by Timothy Zahn.
I've read the first one and part of the second, and wasn't enjoying it very much, so I set aside for later. Only knowing that Thrawn eventually dies kept me going that long. I'll get back to it one of these days, possibly. I really don't see why everyone raves about this, though.
The Hand of Thrawn Duology: "Specter of the Past" and "Vision of the Future" by Timothy Zahn
I actually read these first. Backwards I know, but I enjoyed these more. Possibly because Thrawn was already dead. LOL VotF ends with Luke asking Mara Jade to marry him! Piqued my interest there so I had to read "Union," a comic-style book about their wedding! Not for fanboys! LOL It's really cute, especially the part where all the females are spending the day together prior to the wedding.
"I, Jedi" by Michael Stackpole
I had a great conversation with Mr. Stackpole while buying an autographed copy of this book. I confessed to him that the first time I read it I HATED IT! He laughed and said a lot of people had that reaction at first, and that he'd been prepared to spend six months as a villain before the X-Wing series came out. Which leads me into:
>X-Wing Series by Michael Stackpole and Aaron Alston
One I read this and learned more about Corran Horn, then I appreciated "I,Jedi" a lot more! As Mr. Stackpole pointed out, at first everyone wondered who this upstart Corran Horn was, and why was he telling Luke Skywalker to take a hike?
The X-Wing series is good; it stars Wedge Antilles, developing his character into someone we can care about. Also Corran Horn, a fan favorite later on, gets a great back-story to lead into "I, Jedi" and future novels.
"The Courtship of Princess Leia" by Dave Wolverton
I liked this book, in spite of the silly title. Han gets a run for his money. Fanboys will find it too romantic, I'm sure.
The Black Fleet Crisis trilogy I haven't read yet.
I haven't read the Dark Nest trilogy because it involves bugs, and I hate bugs. I never should have seen "Starship Troopers" on the big screen.
EDIT 6/05/2012: Now, after playing Star Wars: The Old Republic" and having to kill Genosians, Killiks and Colocoids, I will NEVER read a book about bugs.
The Jedi Academy Trilogy: "Jedi Search", "Dark Apprentice" and "Champions of the Force" by Kevin J. Anderson
These were OK. Not great, and I skimmed over parts of them. Most of them.
"Darksaber" by Kevin J. Anderson
Possibly he WORST STAR WARS BOOK I've ever read. ("Possibly" only because I have not, and will not, read anything by Karen Traviss.) I feel fortunate that I got it from the library and didn't waste my money buying it. When I took it back I had the urge to THROW it at the drive through book drop!
"Tatooine Ghost" by Troy Denning
Another fan favorite. A FABULOUS book! Lots of great storyline fill in, and it was so awesome to have a book written from Leia's point of view for a change. Guys, don't let that scare you off, it's not a girly book. Read it!!!
"Luke Skywalker and the Shadows of Mindor" by Matthew Stover
A must read for Luke fans. A Must Read for Star Wars fans! Luke is a serious kickass Jedi here. I loved it when he said he wasn't trained enough to settle a situation without violence!
The New Jedi Order, various authors.
If I'd liked these books I would write a separate blog, but I didn't like them much. I went through them at lightspeed to get the storyline, but overall I didn't enjoy them much. The Jedi are being turned into a bunch of pacifistic wimps, there's a convenient new substance that a lightsaber can't cut, and the fanatical rantings of the Yuzahn Vong really got on my nerves.
OK, that's enough for one blog; let me know what you all think!

"Darksaber" by Kevin J. Anderson
I have not read, what was so bad about it. was it the way it was written? The story, did it not follow the SW storyline? Who is it about and when is it based? sorry lol I love SW books and want to know a little about it. Not that anyone's opinion of a book would ever keep me from reading. its an addiction lol, I need help. Oh go I need help.

It was boring and highly improbable. But read it for yourself, and no you don't need help! LOL

Never read 'em, and not quite sure why everyone makes such a big deal about Thrawn, anyway.

Ooh, I'll have to look that one up! :^O :x

Yeah, pretty good. The ending was great, though.
The WORST STAR WARS BOOK I've ever read.
So, I've heard. :^O Why?
"Tatooine Ghost" by Troy Denning
Sounds cool, but somehow, every time I'm about to buy it, I put it back. I'll have to buy it next time. B-)
"Luke Skywalker and the Shadows of Mindor" by Matthew Stover
Amazing book. An awesome book. I just loved the part where Kar Vastor told Luke that, unlike the Jedi of old, he wasn't afraid of the dark. Great stuff.
The New Jedi Order, various authors.
It was a cool concept, but it just became a tad...redundant. Every book sounded like the other. There were some that stood out, such as Traitor and Dark Journey, but for the most part...not so much.

New Jedi Order... I read it all, but found it too long. They could've done it with half the books, like LOTF. The only book I liked was Traitor, and its the only one I kept after reading them all. I too liked I Jedi more the second time I read it after I read other books with Coran in them.

Haven't read loads of EU with the exception of early books with Han Solo in :x
Read 1st Thrawn book and was not really impressed; however, I might give it another go now I've had a good rest from SW books for a good few years.
Got halfway through the Courtship of Princess Leia last year - I thought I would enjoy it more as it has a good dose of Han Solo, but I was probably too stressed at the time to read any books with an open mind.
Kevin J Anderson has got to be one of my favourite sci-fi authors, but I haven't read the ones you mention.
Tatooine Ghost sounds interesting - Maybe I should get back into reading EU - need a bit of escapism...
Could do with a good read, so might start with Tatooine Ghost on your recommendation...

not quite sure why everyone makes such a big deal about Thrawn, anyway.
Me either, probably why Hand of Thrawn was better, since he was already dead. LOL
Every book sounded like the other.

Yes, it just went on and on and on and I just wanted someone to wipe out the Vong so they'd shut the hell up!

You can't go wrong with that one! Other recommendations would be Shadows of the Empire, Labyrinth of Evil, Darth Maul: Shadowhunter and Luke Skywalker and the Shadows of Mindor.
So, I've heard. :^O Why?
It's just...awful. Boring. The only good part is Luke being chased by a one armed Wampa.

So, I will start by Saying that I am a very big Star Wars Book Reader!
To understand Thrawn, you should read "Outbound Flight" Author I don't know right now. I am not home to reference my Personal Library. But you see from were he comes, and what his goals are.
The New Jedi Order, was very repitative, but I did read all the books. I feel it could have been written in a Trilogy.
I tend to read by series, and jump back and forth, between eras! Keep on Reading!!!

"Tatooine Ghost"
Besides the Darth Bane books, this is one of my favs. I love the tie-in with Leia's family's past and how it helps her put some things in perspective and make decisions for her future.

Oh, gl, it's been so long since I've read some of these books that I honestly can't remember my opinion about them! :O I really should keep some kind of journal about that! The only Star Wars book I most certainly can say that I have not liked is Cloak of Deception. It was so dry that I had a terribly hard time getting through it. But get through it I did. Finally.
My favorite series to this day is the X-wing (including the Wraith Squadron) series. I absolutely loved those books!
I've read every single Star Wars novel out there. For the most part, I have to say they've been pretty enjoyable (on different levels). :)
